As I mentioned in the menu description, I decided to serve similar sweet, salty and spicy snacks to awaken the senses and prepare the palate for the rest of the meal. But once I laid them out I realized that I could have easily made them (and better!). I found a great recipe on leelalicious.com for Sweet and Spicy Roasted Cashews but tweaked it to better suit the seven course meal menu. So here is my recipe:

Garlic Honey Spiced Nuts

Serves 6

3  cups nuts (I used walnuts but really it could be any kind)

1/4 cup honey

1/4 tsp cayenne pepper

1 tsp salt

1/4 tsp garlic powder

2 tbsp coconut sugar

1 tbsp black sesame seeds

Preheat the oven to 325 F. Line a baking sheet with parchment paper or a silicone baking liner. Mix the honey and the cayenne pepper in a mixing bowl. Add the nuts and toss to coat. Spread them out onto the baking pan and bake for 10-15 minutes. Make sure you don’t burn them! Once they are done bring them out and let them cool for about five minutes. While you’re waiting combine the salt, garlic powder, coconut sugar and black sesame seeds in a big bowl. Once the nuts are cooled toss them into the salt mix. Make sure they are all coated nicely. Let them cool and then pack them into an airtight container.
