The Palate Cleanser isn’t really a course in the seven course meal but it is part of the etiquette, I guess. I’ve read some comments by people who are offended by the insertion of palate cleansers, like sorbets or granitas, into seven course meals because it is actually a function that can also be served by the other dishes. Like I have with my third course -The Sweet and Sour Cucumber Salad. But for this particular menu I decided to insert the Granita because I felt it was needed. The preceding dish was the Cumin Spiced Lamb and I felt that to serve the dessert immediately afterwards would have ruined the memory of the lamb and have overshadowed the taste of the infused tapioca pearls in the dessert. And this granita was meant to hold a meaning, a quiet pause after several rich and flavored dishes.

Lychees and Roses are a distinct memory for me from my childhood visits to my Aunt and Uncle’s house in Chandigarh, India. Their house is magical in my childhood memories and the scent of lychees mixing with the roses is just luscious. And this granita couldn’t be more simple to make.

Lychee Rose Granita

Serves 4-6 as a palate cleanser in a seven course meal

3 cups of Ice

2 cups Lychee Nectar or Juice

1 tbsp Rose Water

Technique

Blend everything together until you have a slush. Put it into a freezer proof container and let it freeze for about 4 hours. Scrape the mixture with a fork to break it into ice crystals. Then freeze it again for a couple hours. This is meant to be served in 2 -3 tbsp servings.
