You look at this and go “A plate of some apples and blueberries”. Nope. This is fancy fruit for a fancy meal. These are White Snow Peaches, Vanilla Pears, and Concord Grapes. Throw some spiced simple syrup on top and this is divine. I have to say, out of the entire menu I was most proud of this plate. The simply syrup was something I threw together to bring together some of the flavors from the menu but in a refreshing way. Lemon and anise create a floral taste that would inspire many random English poems that you find on Asian knick knacks. “Beauty erupting tiny flowers look at kitten sweetness I feel”. Thank you.

Fruit Salad with Lemon Anise Syrup

Serves 4 

2 White Snow Peaches (look in Asian Markets because they’re imported from Korea)

2 Vanilla Pears (look in Asian Markets or substitute with Asian Pears)

1 Cup of Concord Grapes

1 Cup of Water

1 Cup of Sugar

1 Lemon Sliced

2 Stars of Anise

Technique

Make the simple syrup first. In a pot bring the water and sugar to boil while stirring constantly. Once the sugar is completely dissolved remove from heat. Add the sliced lemon and anise star to the pot. Cover and steep for about an hour. Cut the peaches and pears into wedges. Arrange as pretty as possible. Place the grapes on top. Drizzle the simply syrup over the fruit. Cover with plastic wrap and chill for a couple hours so that the syrup has some time to seep into the fruit. Serve chilled.
