This meal being at the end of summer I thought I would make use of the wonderful bounty of herbs from our garden and make them into a simple syrup. We grew lemongrass, rosemary, three different types of basil, three different types of mint, sage, lavender, oregano, two different types of thyme, anise hyssop and chives this last summer. For this simple syrup I had used the lemongrass, lemon thyme, mint, basil and rosemary. But then I made a mistake and used ginger beer (non alcoholic) as the base. And the sugar in the ginger syrup combined with the sugars in the simple syrup I had made turned it into a syrupy mess. There were no remnants of the herbs. Ugh. So the next day I went back to the drawing board which wasn’t too hard because I had the simple syrup in the fridge and just had to grab a bottle of sparkling water. And it was so much better. Light, sparkly and earthy. It would have been perfect. Keep learning…

Herbal Soda

Makes one cup of simple syrup

1 Cup Organic Cane Sugar

1 Cup Filtered Water

1 Tbsp Fresh Lemongrass Chopped

1 Tbsp Fresh Lemon Thyme (Leaves stripped from the stems)

1 Tbsp Fresh Chopped Mint

1 Tbsp Fresh Chopped Basil

1 Tbsp Fresh Chopped Rosemary


Combine the sugar and water into a saucepan and place over low heat. Keep stirring until the sugar is dissolved. Take the pan off the heat and put all the herbs into the pan. Cover and steep for an hour or until cooled completely. Strain and keep in the fridge until you’re ready to use.
